Everything is good for you in this featured breakfast parfait photo as long as the cream is non-dairy!
Dairy clogs the arteries leading to heart disease (Summer is heart season!), could be allergic to you, contains harmful hormones if not organic and if the cows are not compassionately treated), and puts on unwanted weight. Fat makes things creamy but dairy fat and humans are not a good match. The fat in the suggested recipe below is far better for you. (Best fats are from coconut* and avocado because they contain enzymes to digest it).
Here's a delicious way to make a delightful all living, organic and vegan cream using your favorite organic nut. Cashews are the most benign as far as flavor goes and are super creamy and easy to work with. Almonds can work, brazil nuts, pecans, whatever is your choice.
Nut Cream Recipe
- 1-1/2 cups cashews (soaked in pure water for at least four hours)*
- 3/4 cup pure chilled water
- a squirt of fresh lemon juice (about 1/8 teaspoon, or more if you enjoy a more pronounced lemon taste)
- a squirt of raw blue agave (or your favorite sweetener), to taste
Place all ingredients in a Vitamix or high speed blender in the order listed above. Run at high speed until creamy (about 30 seconds if using a Vitamix). Add your favorite spice such as a pinch of cardamom.
*Another option is to substitute young Thai coconut meat for the nuts (pictured here). Your local health food store may sell it already harvested from the coconuts in the frozen food department. Otherwise, you can learn to harvest the meat from the coconuts yourself. We've even seen them sold in Wal-Mart stores! Just know it takes a bit of work. Check this out.
